Where/How to start? and what I'm hoping to do
My needs are very simple to start, I want to be able to map 2 x headphone vol, 2 x headphone mute, 1 x monitor vol control and 1 x monitor mute using Mackie or HUI to a Stream Deck+ to use with my audio interface mixer console software (Metric Halo MIO Console).
true noob questions:
1. am I in the right place to learn how to do that?
2. presuming I get a Stream Deck+, what's the next step on this small quest?
Having a brief look around it seems various plugins are available for SD+, can they be used in tandem with any other setups ie could I assign 3 knobs and a couple of buttons for Mackie/HUI use and the rest for a standard key command type setup? Wrong end of the stick?

Yes, you are in the right place.
The basic principle for Stream Deck is that every button and dial is independent of everything else on the board, so you can mix and match buttons and dials any way you like.
The Midi plugin can use the Mackie Control protocol but not HUI. If the thing you want to remote control can use Mackie, you can have Stream Deck buttons and dials for the controls defined in the Mackie Control protocol.
If you get a Stream Deck+, I would say that the next step is to play around with it. Check the Midi plugin documentation for how to set up Midi ports in your system and how to configure the included buttons and dials. If something is unclear, please feel free to use this forum for clarification.

Next step is to make sure the Mackie protocol does indeed support exactly what I want and if it does then it's time to get an SD+! Thanks again.

The Midi plugin can, of course, talk "pure Midi" as well, so if there is something you can't control using the Mackie Control protocol, you may be able to remote control it using Control Change, Note On/Off or some other Midi command.

So I got some more info and the device I want to control headphones on only has headphones available when using Eucon. Can your plugin use Eucon w SD+? Sorry I'm very 101 on certain aspects.

No. Eucon uses an entirely different protocol that isn't implemented in the plugin.

Got it, that is a shame, thanks for helping me understand anyway....right now it's like chasing some elusive tiny creature trying to get this working. I think Bome might be the next point of attack.

Unfortunately, I don't think Bome will solve the problem.
The Eucon protocol is somewhat secret, but from my understanding, it isn't Midi at all. It might be OSC, or completely proprietary.
